Anchovy fillets in oil

INGREDIENTS BUTTER WITH CREAM
Butter – 150g
Sparkling water – 60g
Salt – 15g
Sesame bread – 500g
Garlic oil
PREPARATION
- Put the anchovy fillets in a holster. Season with pepper, oil and lemon peel. Garnish with a few sprigs of fennel.
- Cut the softened butter into cubes.
- Put in a bowl and whisk, adding 20 g of sparkling water at a time, until you reach a foamy consistency.
- Finally fill a small bowl with butter.
- Cut the bread into slices one centimeter high.
- Season with a few drops of garlic oil and toast in the oven for 180 degrees for 8 min.
PLATING
Place the pouch with the anchovies, the bowl with the butter and a basket of toast on a tray.
