Anchovy fillets in oil
Fennel
Lemon peel
Evo oil
Salt
Pepper

INGREDIENTS BUTTER WITH CREAM

Butter – 150g
Sparkling water – 60g
Salt – 15g
Sesame bread – 500g
Garlic oil

PREPARATION

  1. Put the anchovy fillets in a holster. Season with pepper, oil and lemon peel. Garnish with a few sprigs of fennel.
  2. Cut the softened butter into cubes.
  3. Put in a bowl and whisk, adding 20 g of sparkling water at a time, until you reach a foamy consistency.
  4. Finally fill a small bowl with butter.
  5. Cut the bread into slices one centimeter high.
  6. Season with a few drops of garlic oil and toast in the oven for 180 degrees for 8 min.

PLATING

Place the pouch with the anchovies, the bowl with the butter and a basket of toast on a tray.
