SPAGHETTI WITH GARLIC, ANCHOVY AND FLAVORED CRUMB
INGREDIENTS
Spaghetti – 400 g
8 Cloves Red garlic
Anchovy fillets in oil – 250g
Breadcrumbs – 400g
Dried red chili – 5g
Parsley – 150g
Juice of half a lemon
Lemon peel
Evo oil
Salt
Pepper
PREPARATION
- Bring the water to a boil in a large pot. Add the salt and then the spaghetti.
- In a frying pan prepare a sauté with minced garlic “without soul” (garlic without the internal sprout), anchovies and chili.
- Let go for a few minutes, crushing everything with the back of the spoon. Cook for about 10 minutes, then adding a ladle of cooking water of the pasta.
- For the flavored crumb: toast the breadcrumbs with a little oil, a tablespoon of anchovy oil, lemon juice and zest, salt, pepper and a pinch of parsley.
- When it is enough roasted it will be almost amber in color. Spread out on a baking sheet to cool.
PLATING
Drain the pasta to just over half of the cooking in the pan with the seasoning and complete the same creating a homogeneous creamy.
