ARTICHOKES WITH ANCHOVIES

INGREDIENTS

8 artichokes
4 anchovies in oil
3 tablespoons of breadcrumbs
parsley
sweet cheese
1 clove of garlic
lemon
oil
salt
pepper

PREPARATION

  1. Clean the artichokes removing the hardest leaves and slightly open them
  2. Soak them for half an hour in a bowl with water and lemon juice
  3. Preparation stuffing: in a bowl put the breadcrumbs, parsley and garlic finely chopped, anchovies cut into pieces. Mix, softening the mixture with a little oil. 
  4. Drain the artichokes and fill them with a little of the mixture, finally adding the sweet cheese 
  5. In a pan arrange the artichokes straight next to each other, add salt, pepper, oil and water  
  6. Place on a low flame for about 1 hour until the water has evaporated

PLATING

On a flat plate, place the artichokes adding raw oil and some sprigs of parsley.
