BAKED SALMON WITH CANTABRIAN ANCHOVY SAUCE

INGREDIENTS

Fresh salmon – 800g

4 Salted anchovies from Cantabrian

Parsley

2 cloves of garlic 

White wine

Evo oil

Salt

Pepper 

PREPARATION

  1. In a pan cook the salmon with a drizzle of oil, salt and pepper. Bake in the oven at 180 ºC for about 15 minutes.
  2. In a mixer blend the anchovies with garlic, parsley and EVO oil
  3. When the salmon is cooked, sprinkle with the anchovy sauce

 

PLATING

Serve the salmon by adding fresh parsley leaves and possibly a few drops of lemon or balsamic vinegar.
